After a long day at work, I'm tired and dread time consuming dinner making! This recipe is fast, easy and only needs 8 ingredients (9 if you count both eggs).
Coconut Shrimp
1 lb shrimp
3 tablespoons flour
1 cup shredded coconut (sweetened or unsweetend, whatever you prefer)
2 eggs
Squeeze of fresh lime *optional*
Salt (to your liking)
Cayenne Pepper (to your liking)
...feel free to add whatever other seasonings you like!
- Prep shrimp! You can buy shrimp deshelled and deveined with the tails attached which saves you lots of time and stress. Ha!
- *optional step* Squeeze fresh lime juice all over the shrimp. (to your liking but don't put too much)
- Break 2 eggs into a bowl, whisk. Add seasonings, mix.
- Add flour to the whisked eggs and mix well.
- Dump your shredded coconut into a seperate container
- Dip the shrimp into the batter then into the coconut.
- Fry at medium heat in whatever oil you like. I used vegetable.
I forgot to take a picture of the finished product, but it came out tasty! This goes well with a sweet n' sour or mango dipping sauce. I used a store bought sauce because I'm too lazy for all that shit! Ha!
