Meals For The Lazy: Coconut Shrimp

After a long day at work, I'm tired and dread time consuming dinner making! This recipe is fast, easy and only needs 8 ingredients (9 if you count both eggs).


Coconut Shrimp
1 lb shrimp
3 tablespoons flour
1 cup shredded coconut (sweetened or unsweetend, whatever you prefer)
2 eggs
Squeeze of fresh lime *optional*
Salt (to your liking)
Cayenne Pepper (to your liking)
...feel free to add whatever other seasonings you like!

  1. Prep shrimp! You can buy shrimp deshelled and deveined with the tails attached which saves you lots of time and stress. Ha!
  2. *optional step* Squeeze fresh lime juice all over the shrimp. (to your liking but don't put too much)
  3. Break 2 eggs into a bowl, whisk.  Add seasonings, mix. 
  4. Add flour to the whisked eggs and mix well.
  5. Dump your shredded coconut into a seperate container
  6. Dip the shrimp into the batter then into the coconut.
  7. Fry at medium heat in whatever oil you like.  I used vegetable.
I forgot to take a picture of the finished product, but it came out tasty!  This goes well with a sweet n' sour or mango dipping sauce.  I used a store bought sauce because I'm too lazy for all that shit! Ha!
